Slow Cook Ground Turkey Salsa Loaf

Meatloaf has always been a favorite around here. But, in the heat of the summer there is nothinig worse than heating up the house with the oven. So I sat down and developed a recipe everyone would love that I could use in my slow cooker. To make it a complete meal I serve it with my dirty mashed potatos and either corn, a side salad or some other vegtable. Homemade bread rounds out the meal which can be done for less than 10 dollars and feeds at least 8 people.

2 rolls of ground turkey defrosted (thats 2 lbs for those of you who buy it unfrozen out of the meat case.)
1/2 cup unseasoned bread crumbs
1/2 cup tomato sauce
1 tsp sea salt
2 tsp black pepper
1 tbsp Italian seasoning
1/4 cup chopped onions (your choice of onion)
2 cloves garlic or shallots ( I usually do both.)
1 large egg
1/2 Cup Salsa (for later use)
Mix everything but the salsa together in a large bowl. Shape into large loaf and place in slow cooker. Cook on high for approximatly 3 hours or low for about 5. Around 2 1/2 hours pour 1/2 cup salsa on top and cook the rest of the way.
Remove from slow cooker or crock pot slice and serve.
